I consider a great meal an experience… from the moment you sit down at the table, until the moment you walk out the door. The people you are with, the ambiance around you, it all plays into the meal; writing a story in real-time for you to break down + remember later. In my mind, the best of meals are when strike that perfect balance with the food, company, environment + energy. You can literally close your eyes and be transported back to that exact moment… the sights, sounds + tastes are as vivid as the original.

Most of my favorite food memories (which I shared here) have been with amazing friends + family and the food was pure decadence on every level. No one thinks twice about their caloric intake, the swimsuit they are wanting to fit into or if they should ‘have the dressing on the side’. You can make up for it at another date, this meal with these guests… it is worth every bite! No one should be counting calories when they can be adding a notch in their belt for lifelong experiences that will go down in dining history.
No, I do not consider every meal I eat to be an epic dining experience where I should indulge my every whim (even if I consider it for a nano-second). However, if I am traveling, it is a major holiday or I am in a celebratory mood, I do not ever go into a meal with the mindset to ‘watch what I eat’. Life is a gift and a delicious dining experience is far more valuable in my book than making sure my jeans fit just right.
So… might I suggest that we all adapt this mantra: count the memories, not the calories.
